Combine the following ingredients in a saucepan, bring to a boil, reduce heat and cook down until tender and thickened.
4-6 cups of chopped ripe, peaches
1-2 tablespoons cornstarch
1/2 cup brown or white sugar
Pinch of salt
1/2 - 2 teaspoons of spices (ginger, cinnamon), if desired
1 tablespoon unsalted butter
